Pumpkin Bread Pudding (Single Serving)

My Mom and I go on a lunch date once a week.  One of our favorite spots to eat is now closed and I am left craving the wonderful Bread Pudding we would order and share.  I will never forget the warm sweet carmel drizzled over the Bread Pudding.  My tastebuds are crying because they are so sad they will never taste this wonderful dessert from that restaurant ever again. 

Okay, cheer up tastebuds! I have created my own version of this wonderful yumminess and better yet, I made it healthy! :)

Ezekiel Cinnamon Raisin Bread & Perfect Fit Protein Powder by Tone It up

Some Bread Pudding recipes have a whopping 500 calories per serving but my healthier version only has 219 calories (with syrup)!  This is really quick and easy to whip up.  Double the recipe and share with a friend.  My husband commented how good the house smelled when baking this!

Pumpkin Bread Pudding
1 Slice Ezekiel Cinnamon Raisin Bread
1/2 Scoop Perfect Fit Protein Powder by Tone It Up
1/2 tsp Vanilla
1/4 C Egg Whites
1 1/2 T Unsweetened Vanilla Almond Milk
3 T Pumpkin
1/2 tsp Cinnamon
1/2 tsp Stevia
1 T 100% Pure Maple Syrup (set aside for drizzling later)
Pam Olive Oil Spray

Preheat oven to 350.

Spray an individual size baking dish with Pam Olive Oil Spray. 

Tear bread into small pieces and place in baking dish - set aside.

Mix all ingredients except bread and syrup into a small bowl.  Pour mixture over the bread and gently mix around with fork to coat all pieces.

Bake uncovered for 25 minutes at 350.  Broil 1-2 minutes at the end to brown up the top.

Drizzle with syrup and enjoy while it's hot!

Serves: 1
219 calories with syrup or 169 calories with no syrup

1. If you use plain Ezekiel bread just add in some raisins or carob chips! 
2. Substitute the 1/2 tsp cinnamon for pumpkin spice. Mmm!

Long Story Short

So life got super busy after Rory was born!  Just about three weeks after we had our baby boy we moved into our new house.  Thank goodness for family and friends to help us with the transition.  Rory is three months old now and I have yet to do a blog post to brag him up. 

Life with a newborn and a two year old is very eventful to say the least.  Mollie loves her little brother and is so sweet with him.  Her only issue with him is that she believes every baby toy we give him belongs to her.  She has become quite the toy thief! 

Jason was able to take two weeks off from work after we had our baby.  His time was spent packing up boxes to move into our new home.  When he went back to work I had family and friends help me with Mollie so that I could care for Rory.  She got to go on play dates which she absolutely loved!

I worked part-time from home up until a week ago.  Rory started daycare on October 29th and I am now back to work in full swing.  I had a wonderful three months at home with him.  Days go by so quickly and I hate to miss a single moment with my kiddos. 

I really miss updating this blog!  I had to take a break to focus all my love and attention towards my family.  Now that things are starting to get in routine with the new baby and new house I can get back to blogging!  Right now everyone is in bed and it's just me and my cat sitting at the kitchen counter.  One of our dogs is laying behind me getting his snore on.  Life is good.  :)

Jason and I signed up with dietbet.com for a weight loss game and our final weigh-in is this coming Wednesday.  We decided to do the Tone It Up 7 Day Slim Down to try to lose the last couple of pounds to reach our goals.  We are eating lean and green and feeling amazing.  Jason is a little hungry but he said he will live.  Poor guy, the things I drag him into!

I haven't ran very much since Rory was born.  I have been on the treadmill a total of 3 times now.  I just haven't had the time or should I say I just haven't made it a priority.  I'm still having neck pain issues which I recently went back to the doctor for and had another injection done.  Running long distances aggrevates it so I'm just doing what I can for now to get in some exercise.  Earlier in October I got out for several walks with Rory in the stroller.  Weather is getting colder now so I don't think he would appreciate the cold and windy stroller rides.

Pregnancy: 37 Weeks (Breathing a Sigh of Relief)

We have officially made it to the "safe" zone!  The 37 week point is considered full term and it is safe to deliver the baby now.  We have had an eventful past two weeks to say the least.  At 35 weeks pregnant I went to the hospital with preterm labor.  This had my husband and I feeling extremely anxious and scared.  We were being told that at this point there is a risk of the baby being born with lungs that were not fully developed yet. 

It was Saturday, June 30th, and we had spent the day at my family reunion on my Dad's side.  It was horribly hot and we were outside for a good portion of the day.  On our trip back home I started feeling contractions.  This was around 5:00pm and once I got home I tried sitting at the table to eat supper but couldn't.  I went to lay down on the couch a few times and realized these contractions were very steady and were not going away.  At 7:30pm I called the OB nurses station at the hospital and they told me I could either come in right away to be checked or stay home for another hour and take some tylenol, drink lots of water and keep my feet up.  I decided to stay home and wait it out.  Three hours later there were no signs of these contractions stopping so I called the hospital and told them I was on my way.  After being monitored for a little while they said my contractions were 2-3 minutes apart.  I was given an injection of Terbutaline and was monitored for an hour.  The contractions were still ongoing so the doctor ordered the nurse to give me one more injection.  At about 1:30am the contractions had finally stopped!  I was told they wanted to keep me overnight in the hospital for monitoring.  At 7:00am I was told it was okay for me to go home.  They told me to continue drinking lots of fluids and get some rest.

35 Weeks

At 8:40 on Sunday morning (only an hour and forty minutes after leaving the hospital) I was sitting at the table eating a bowl of cereal with Mollie.  I looked at Jason and said "I hate to say this, but the contractions are back."  This time I was even more worried because the nurse had told me that the doctor would most likely let labor continue if the contractions came back and they wouldn't try medication to stop them.  We made arrangements to take Mollie to Jason's sister's house and we packed up a hospital bag for me.  I thought this was it, we were going to have our baby today!

When we got back to the hospital they hooked me up to the monitor to check my contractions and monitor the baby's heart beat.  When they checked me I was dilated to 2.5cm.  Over the next four hours they continued to monitor the contractions and the doctor came in to visit with me about the risks of letting labor continue.  They said they would check me one more time at 4:00pm and then decide what to do from there.  When 4 o'clock came around I was still at a 2.5 so they decided to send me home and told me to come back if contractions go worse and lasted longer.  Later that night the contractions started to slow down and eventually stopped by the time I went to bed.  This was such a relief but I was so confused!  I really thought the baby was going to come and here I was back at home.  This little boy has us on our toes! 

I have continued to have contractions off and on over the past two weeks.  Sometimes they will last 3-4 hours and sometimes they are just random and only last about 30 minutes.  Each time they start I wonder if this is the real deal or not.  It starts to drive a person a little crazy!  Some nights I will wake up with bad cramping and the feeling of pressure.  I guess he is preparing me for the sleepless nights that are about to come. 

I am just relieved to have made it to the 37 week mark and I feel like I can breath a sigh of relief knowing that the risks of preterm labor are behind us.  I have a doctor appointment tomorrow morning and I am anxious to see if I have progressed any further or if I have stayed at 2.5cm. 

On a side note...our house is SOLD!  We got an offer on June 28th and we should be closing around August 15th.  So shortly after the baby is born we will be moving into our new home.  I am really excited to get moved so that we can get a nursery done for our little guy.  Until then he will be sleeping in a bassinet in our room. 

I feel like there is so much going on and I am so far behind on my blog updates!  I have other things I want to share but this is getting way too long already.  Hopefully I can get a few more posts in soon! :)

Pregnancy: 32 Weeks & Ultrasound

In less than 8 weeks the newest member of the family will arrive and change our lives forever.  I have a hard time wrapping my head around the idea of having a baby in our home again.  It doesn't seem possible that Mollie is already a toddler and she is no longer a little baby.  She's going to be an awesome big sister!

Today we had our 32 week prenatal appointment and an ultrasound done.  Rory weighs 4 lbs 6 oz and they said that he is measuring right on track for 32 weeks.  His heart rate was 134 bpm.

32 weeks 1 day - Profile Picture

Now that I am all healed up from surgery I have been so much more active.  I can actually clean the house, go to the grocery store and play with Mollie and not have to sit down every 5 minutes because of the pain and swelling that I had.  Things are going great!

We listed our house for sale last Friday and have 4 scheduled showings already.  We are hoping it sells fast so that we can get moved in to our new home.  I feel like we may be a little crazy for trying to sell our house right towards the end of this pregnancy but I know things will work out just fine. 

Symptoms: I have been getting a little heart burn here and there lately but nothing too bad yet.  Acne is back in full attack mode.  It had cleared up for a few weeks but it is making another appearance!

Baby Movement: He doesn't stop much, I feel him throughout the day quite a bit and still feel him moving in the middle of the night too.  I love it!

Contractions: The Braxton Hicks contractions have slowed way down, not getting them very often anymore. 

Baby Measurements: 4 lbs 6 oz  - He will double in size over the next 8 weeks!!

Next Prenatal Appointment: June 22nd - After this appointment I will start going every week.  WHAT!?!?!  How is this possible, I still feel like I should be in my first trimester.  SLOW DOWN TIME!!!

Stretch Marks: No

Food Cravings:  Dairy Queen Blizzard!  I have had a mega sweet tooth and I fixed it with a Cherry Cheesecake Blizzard from DQ.  I'm still craving watermelon too, just made a trip to the store last night to buy more.  I was also craving a kale salad with fruit (pictured below) which I made for lunch.

Kale, carrots, blueberries, strawberries, avocado (not in picture, added before eating) and a side of sugar snap peas.

Baby Buys: Went to Carter's at the Mall of America last week and bought Rory a baby blanket and a new outfit.  This is only the second time I have bought anything new from the store for him.  I have been trying to purchase everything from Ebay or at rummage sales.  All the 0-6 month size used clothing has zero wear and tear so it is practically new and a fraction of the cost! 

I have been storing Rory's clothes in a couple of Mollie's dresser drawers.  I told her the clothes were for Rory so she wasn't allowed to take them out of the drawer.  She must have noticed that most of the clothes were blue because the other day I was going to dress her in a blue/white striped tunic with blue leggings and she kept saying "No, Rory's".  She thought because they were blue that she wasn't suppose to wear them.  Too cute! :)

Prenatal Doctor Appointment Update

Glucose screening time!  I had the "orange" drink sitting in my fridge since my last prenatal appointment waiting to be chugged in the alotted 5 minute time frame.  At 10 o'clock I twisted off the cap and drank it like I was in some kind of drinking competition.  Easy as pie, I had it gone in less than 60 seconds.  Some people find the drink to be disgusting and they say it makes them gag trying to get it down.  I personally think it just tastes like sugary orange kool-aid.  I've had worse things that's for sure. 

After I had this tasty little cocktail I finished getting ready and headed to the clinic.  At 11 o'clock they drew my blood at the lab and then I headed down the hall to see my OBGYN for my prenatal check-up.  All-in-all the appointment went great.  My blood work results came back and I tested negative for gestational diabetes.  My doctor listened to the baby's heartbeat and it was beating at a healthy 147 beats per minute. 

I discussed my weight gain with my doctor today.  I told her I was concerned with how much I had gained at this point compared to my first pregnancy.  With Mollie I gained a total of 35 pounds and right now I still have 12 weeks to go and I have already gained 30 pounds.  I was definitely more active during my first pregnancy so that makes a difference.  I have been completely inactive the past couple of months due to health reasons but now that I have had the surgery done and I am on the road to recovery I think things will start to level out and get back on a healthy track.  My doctor told me it was good that I was aware of my weight gain and that I just need to make an effort to eat healthy and start walking once I am completely healed up.

It's hard to believe that I am in my THIRD trimester already!  When my doctor told me I would be coming back every two weeks from now on it really hit me.  We are getting so close to meeting our baby boy! 

Baby Bump - 28 Weeks

This afternoon as I was sitting at my computer catching up on some work emails there was a knock at the door.  I usually do not answer the door when I am home by myself (I'm just wierd like that).  For some reason I decided to check out who it was and I'm so glad I did.  It was a lady delivering flowers that Jason had got for me from him and Mollie for Mother's Day.  It made me smile from ear to ear.  I wasn't expecting that at all and it completely made my day!

Pregnancy: 28 Weeks (7 Months)

This pregnancy has been very eventful to say the least.  Things seem to be finally calming down and my fingers are crossed in hopes that I can relax and enjoy the rest of the weeks to come before our baby arrives.  During this pregnancy I have endured physical therapy appointments for a neck injury, the joys of morning sickness and then surgery to repair an inguinal hernia and an extremely painful varicose vein.  Now that I am on the road to recovery I am feeling better and starting to get back on my feet again.  I am really happy that it is Spring now and I look foward to the nice weather and getting outside for some fresh air and walks with the family.  I am still on activity restriction for a little while longer and am not able to lift anything over 20 lbs for another 2-3 weeks (not being able to pick Mollie up has been the hardest thing).  Jason has been an angel and has helped take care of me and Mollie.  My Mom and Step-Dad also came and stayed a few different times to help out around the house and to help take care of Mollie.

So here we are at 7 months pregnant and August 2nd will be here in a blink of an eye.  We are currently looking at buying a new house and getting ours sold.  Our home only has our master bedroom and one other bedroom upstairs (two more bedrooms are downstairs).  We are eager to find a house with three rooms on the main floor so that both the kids have their own room.  It's crunch time!  Ideally we would love to have this all happen with in the next couple of months but selling/buying a house is quite the process.  I am hoping things will fall into place for us and it will be a smooth transition. 

Baby Update:
Symptoms - Fatigue!  Even though I have a body pillow to help with comfort at night, I am still finding it hard to get comfortable enough to sleep well.  I guess I will be prepared for sleepless nights when the baby arrives!  As far as the acne goes, it has actually cleared up a bit.  YAY!

Baby Movement - Rory is a mover and a shaker, especially at night.  When I wake up in the middle of the night I can often feel him moving around too.  The last couple of weeks I have been able to feel when he has hiccups.  This usually happens about once a day. 

Contractions - Still getting the Braxton Hicks contractions frequently.  I still notice they happen more when I have a full bladder or when I am sitting straight up or leaning forward. 

Baby Measurments - At 28 weeks the baby measures about 14.8 inches long and weighs about 2 3/4 lbs. 

Next Prenatal Check-up - Friday, May 11th.  It's time for my glucose screening!  Bring on the "orange drink".  Some people have trouble drinking it and say it's dreadful.  When I did the test during my first pregnancy I personally did not have any trouble with the drink and I honestly didn't think it was bad at all. 

Stretch Marks - None

Food Cravings - This past week or so I have been craving ice cream and cherries.  I have been on a kick with eating pears too, I eat one almost every day.

Baby Buys - I have finally started buying clothes for Rory.  Up until now I have been holding off because I went overboard with Mollie and ended up with WAY too much stuff.  Over the past week I have been buying sleepers, onesies and socks on Ebay and from a couple of friends who were selling their baby boy clothes.  I have found some amazing deals!  For example I found 30 pairs 0-6 month socks for only 15 cents a piece!  SCORE! 

Baby Bump Update - I am feeling super stretched right now.  I can tell my belly is expanding and feels really tight.  Definitely in the third trimester now!

Pregnancy: 25 Weeks

Gender: Boy
Baby Name: Rory - In Irish, the name Rory means- famous ruler, red.  This was the name of the last king of Irelend, Rory O'Connor.
Total Weight Gain: 25.4 pounds
Belly measurement: 38 inches
Favorite Clothes: Sweat pants and maternity tank or tee
Stretch marks: No, didn't get any from the first pregnancy so I'm hoping the same goes for this one! 
*I use Palmer's Cocoa Butter Formula on my belly daily after getting out of the shower.

Sleep: Not very comfortable, I toss and turn about 134 times each night.  Okay, so maybe not that much but I am using a body pillow which is hard to switch from side to side when I need to move. 
Nesting: I have been organizing and tossing things out left and right.  I have this major urge to purge!  It's nice because my kitchen cabinets are getting organized, closets have more room in them and the house seems cleaner than ever! 
Cravings: Fresh strawberries, rice crispy treats and I have been really excited for my daughter's birthday coming up this weekend so I can enjoy a piece of cake!  :)
Contractions: Braxton Hicks have been happening quite a bit each day lately.  They are just a mild contraction that makes my belly feel really tight, usually happens when I have a full bladder or if I'm leaning foward while sitting.  They last about a minute or less.
Pregnancy Symptoms: Acne!  Yikes, I am breaking out so bad.  I am getting zits above my lip and on my chin really bad.  My hair has been getting really thick too.  Time for a haircut!
Baby Measurements: At 25 weeks the baby measures about 13.5 inches long and is about 1.5 pounds. 
Best Moment This Week: Feeling the baby move so much, he's an active little guy!

This Weeks Happenings In Our Life: Mollie's birthday party is this weekend, she is turning 2!  We are having family come over for lunch on Saturday.  I plan on serving BBQ's, salad and some fabulous cake.  In other news, I go to see a general surgeon tomorrow (Friday) to discuss the inguinal hernia surgery.  I have TONS of questions I need answered because I am feeling extremely nervous about the surgery during pregnancy.  **UPDATE: I have been scheduled for surgery on Monday.  It's been chaotic the past few days trying to line up things for work, figuring out who can help take care of Mollie and Jason deciding what days he needs to take off work.  Fingers are crossed and I'm hoping everything goes well.

Healthy Chicken Fajita Bake

My mouth was watering as I smelled this wonderful chicken fajita bake in the oven.  I could not wait to dig in.  I found the recipe from a mommy vlogger on YouTube and I will put the link down below to her video.  This was beyond simple to make and simply delicious to eat.  This is going to be on a regular rotation in this household from now on.  Give it a try and I hope you love it as much as my family did. 
Sliced green pepper, red pepper and onion.

Under the veggies are the chicken breasts which I first cut into thick stips.
After my husband and I dished out our portions we still had this much leftover.  I know what I'm having for lunch tomorrow!

Garnish with 0% plain greek yogurt and a little reduced fat shredded cheese and serve on a whole grain tortilla.  I think this would be great served over brown rice as well.

Chicken Fajita Bake

1 large green bell pepper
1 large red bell pepper
1/2 large onion or one small onion
2 boneless chicken breasts

Preheat oven to 350 degrees F.

Slice the peppers, onion and chicken into strips.  Spray a 9 x 13 glass pan with Pam Olive Oil Spray.  First place your strips of chicken on the bottom of pan and then evenly spread out the veggies on top.  Season with salt, pepper, chili powder and Mrs. Dash original blend.

Bake uncovered for 45 minutes or until chicken is done and veggies are done to your liking.  Serve on a whole wheat tortilla or over brown rice.  Garnish with 0% plain greek yogurt (I use Chobani) and reduced fat shredded cheese.  I think a squeezing fresh lime juice over this would be fantastic too but unfortunately I was out of limes when I made this.

Oh Hoppy Day!

Happy Easter!  I hope you all had a wonderful day spent with family and/or friends.  We had a busy day with an Easter meal at Jason's Aunt's house, a trip out to my Dad's house for a mini Easter egg hunt for Mollie and then home to watch the Master's golf tournament which we had recorded.

Baby Burghardt is a....

BOY!  We're having a baby boy!  I don't know what the deal is but I am over the moon excited about having a little boy.  Mollie is going to be the best big sister, Daddy is going to have a golfing buddy and I am going to have a precious little child to hold and love unconditionally forever. 

If you ask Mollie if she is having a brother or sister she will tell you matter of factly..."NO!".  If you ask her if Mommy is having a boy or girl she will also tell you..."NO!"  I have a little video clip of her doing this and it's pretty darn cute.  No matter when we ask we always get the same answer. 

During our ultrasound the baby felt like he was practicing some dance moves.  The ultrasound tech was laughing because she could feel him moving around so much.  It was awesome!  We were able to see the baby open it's mouth and it looked like he was talking.  Every time she would show us a shot of his hands it looked like he was pointing at something with his index finger.  Cutest thing ever!  It took about three separate tries to see the gender but on the last attempt she was able to get a clear view.  Jason and I were so excited.  I felt like I was on cloud 9 after the appointment and I kept getting butterflies in my stomach.  It is an overwhelming feeling of pure bliss knowing that we have this huge blessing coming into our lives soon.  We can't wait to meet him!

I wasn't able to see OBGYN today.  We were told she was called over to the hospital for an emergency so we rescheduled for another day.  I did have some questions for her but it can wait until next time.  I have had some major pain from a inguinal hernia and had gone to see a general surgeon who actually scheduled me for surgery.  The idea of surgery during pregnancy FREAKED me out and made me extremely nervous.  Long story short: I called a surgical facility in a nearby city to get a second opinion and they strongly disagreed with the first doctor.  They said they would NOT do surgery unless it was an emergency.  I was told the pain will probably get worse but going through surgery is too risky to the baby.  I am hoping my doctor has some suggestions on how to manage the pain over the next four months.  At this point I have a hard time picking up my daughter and most of the time I can't stand longer than 5 minutes without being in pain.

Enough about that not-so-fun stuff.  On to happier topics!  As soon as we left the clinic I told Jason we had to go buy something for our baby boy.  We headed to Target and picked out a couple things.  It's quite a transition from buying everything that is pink with ruffles and polka dots to things that are blue and well, boy-ish!  It was fun!  Here's what we found.

Intelligender Results

IntelliGender is a gender prediction test that I have seen so many expectant mom's talk about on YouTube.  I thought it would be fun to check it out just for fun.  I don't know if I believe in it or not.  I think it's done more for the fun of entertaining ourselves during pregnancy and seeing if it ends up being right or not.  I have my ultrasound coming up on Monday so I will get to see if this fabulous IntelliGender is really accurate.  I purchased this off Amazon.com but I believe they can be found at Walgreen's and other stores like that.  The pictures below are pretty self explanatory...

We had our ultrasound and the IntelliGender was CORRECT!  We are having a baby boy!  I have butterflies every time I think about it!  Mollie is going to be a big sister. :)

Pregnant Girl Diet: Meal & Snack Ideas Part II

It feels so good to be craving all these healthy foods again!  I feel like I am back on track.  That first trimester really threw me for a loop.  I will be 22 weeks pregant this Thursday and I am so excited because we will have our ultrasound soon!  We will hopefully be finding out if Baby B is a girl or boy on April 2nd!

I thought I would share some healthy meals and snacks that I have made in the past week or so.  This is my second meal/snack post.  Like I said last time I love to see what other people are making because sometimes you just need some help deciding what to make or need some inspiration.

Hydration is key!  Start your day with at least 8 ounces.

My favorite way to flavor water is to throw in some cut up strawberries and lemons (limes are great too!).  Aim for half of your body weight in ounces every day.

Breakfast: Most important meal of the day, fuel up! :)

French Toast: made with whole wheat raisin bread, egg whites, almond milk, cinnamon, vanilla & almond extract.  Served with a few strawberries on the side which Mollie ended up stealing. :)

Strawberry Lime Protein Pancakes with a side of sliced strawberries.

Tone It Up - Egg White Scramble with spinach, zucchini, mushrooms and green peppers.  Slice of whole wheat raisin toast with non-dairy butter spread.

Kashi whole grain waffle with 1 T natural peanut butter and green apple slices.  This would make a good mid-morning snack too!

Something not too heavy so you don't fall into an "after lunch coma"!
Salmon Wrap (2.5 oz salmon with mustard, diced green peppers, carrots, pickles or cucumbers, fresh spinach and avocado on a high fiber whole grain wrap.  This recipe was inspired by my favorite health and fitness blog, Peanut Butter Fingers.

naVeggie pasta with spinach chicken sausage, green beans, carrots, fresh mushrooms and 1/4 C spaghetti sauce.  Top with a little low fat mozzarella cheese.  I made this for Jason the other day to take to out to work. 

Homemade turkey burger (lean turkey, chopped spinach, egg whites & Mrs. Dash).  Serve on whole wheat bread with lettuce, pickles, provolone and organic ketchup.  Side of grapes not pictured.

Choc Peanut Butter Protein Smoothie

Fruit salad & Lemon Chobani 0% greek yogurt

Snacks to go: Chobani and 1/4 C granola, water with strawberries & limes and a pear.

Grapes, sliced apple and cheddar cheese (pregnancy craving big time!).

Green Julius (heathly verson of orange julis)

Alwasy a challenge to get dinner ready in our house. I have to plan ahead, I hate deciding last minute what to make.

Homemade pizza on whole grain crust with spinach, green peppers, mushrooms, canadian bacon and low fat mozzarella cheese.

Turkey Loaf made with lean ground turkey, egg whites, chopped spinach, pepper, Mrs. Dash, garlic and dry mustard.  Topped with 2 T BBQ sauce.
