*Scrumptious Garden Veggies*

Yay!  Fresh veggies from my Dad's garden: green peppers, onions...HUGE onions, cherry tomatoes and zucchini!  These looked so good on my counter I couldn't wait to dig in and start chopping.

Fresh and home grown veggies are THE best!

  I chopped up the green pepper, onion and zucchini to prep for grilling.


Place on large piece of foil, spray with Pam, season with your favorite Mrs. Dash and squeeze fresh lime juice over chopped veggies.  Top with another piece of foil, fold edges and grill!

Mmmm, I finished off the leftovers!

*Farmer's Market Goodies*

This is the best time of year for several reasons but one close to the top of the list is the local farmer's market!  Living in South Dakota the farmer's market season is short lived.  Here are the goodies we found this trip:
I love buying cucumbers from the farmer's market because they don't have the wax layer on them like you find at the grocery store.  I bought a mini loaf of blueberry bread and chocolate chip banana bread (one for me and one for the hubby - we shared with Mollie too!).  Snap peas!!  These are great to throw in a salad with spinach, kale, salmon, diced apples and feta cheese.  Mmmm!  I also bought some honey which I later found out the owner's (of the honey company) are neighbors to my late Grandma and Grandpa.  We picked up a dozen ears of sweet corn for $5.  Absolutely at it's peek, it was delicious!  We ate four ears and then froze the rest.  Pizza anyone?  YES PLEASE!  We chose an authentic Italian garlic chicken pizza on whole wheat from Mama Gina's Bakery.  It was so filling and so good.  Dessert...I had to try this little cherry pie!  Just the perfect size (sorry I didn't share this one!).  It was good but it definitely didn't beat my Mom's cherry pie. 

Eating fresh and local produce helps me grow big, strong and healthy! :)

*Class Reunion*

Eek!  I seriously have a really hard time comprehending how quickly 10 years goes by!  I was so excited all Summer to go to my high school reunion.  I had not seen many of my classmates since graduation day.  I actually had butterflies all day on Friday!  Jason and I drove to my Mom and Step-Dad's Friday afternoon because they were going to watch Mollie for us while we were at the reunion.  My classmates all met up for a night of socializing and karaoke!

  Then on Saturday we went to the park for a potluck/picnic.  Jason had to go back home for a golf tournament he was in so I picked up Mollie from my Mom's and she came with me to the picnic.  It was so fun to see everyone's families and all the little kids running around.  Wow, things really change in 10 years!

After the picnic Mollie and I headed to my Mom's house to stay for the rest of the weekend.  We went to church Saturday evening followed by a nice dinner and then a little grocery shopping.  After I put Mollie to bed Mom and I enjoyed a slice of angel food cake with strawberries.  Before hitting the hay we watched a couple of shows on HGTV and chatted a bit.  Sunday morning Mollie and I packed up and headed home.  When we got back we stopped by the golf course to see Jason and wish him good luck before he started his second day of the tournament.

* I Just Felt Like Running *

Whenever I go for a long run the line from Forrest Gump always relays in my head "I just felt like running".  I love that movie!


I am at the start of a training plan I put together for myself for an upcoming race.  It's a 15.2 mile run where you run from one town to another and it ends at a college campus.  My wonderful running buddy, Rachael, has agreed to run with me.  I have never been in a race without her!  In May 2008 we completed a full 26.2 mile marathon just a few months before we both got pregnant.  Her son and my daughter are only 10 days apart!

I started training this week with three run days.  Monday 3.2 mile in 26min 48sec, Wednesday 5 miles in 44min 20 sec and today I ran 7 miles in 1hr 4min. 

Today was one of those days where I just couldn't get my rhythm.  I started my run with a strange pain in my ankle but after the first mile the pain went away.  So I was feeling good and really got my speed where I wanted it.  At about mile 4 I had a pain start in my shoulder, at first it was more annoying than painful.  As another mile went by the pain started to shoot up my neck.  I basically was trying to run with as little movement in my left arm as possible but the pain wasn't giving up.  I ran through it until I hit 7 miles and called it quits.  At first I was really bummed because my goal was to complete 8 miles this morning.  I got over it and decided to be happy with getting 7 done and I know I still have 6 weeks of training to get longer runs in before the race.  Now I need to figure out how to fix this shoulder so it won't cause problems again.

On a happier note, it was gorgeous this morning!  It was cloudy (which I love while running because it's easier to stay cool) and only 65 degrees with wind at 10mph.  Perfect running conditions, can't complain!  I had Jason drive me out to the lake (8 miles from home) and drop me off so I could run back home on the bike path.  I love doing this because it leaves me with no choice but to complete the distance I want.  I like to get on mapmyrun.com before I go out so I can try new running routes and know how many miles it is.  I like to have a change in scenery and get bored when taking the same routes too often.

*Healthy BBQ's*

I L.O.V.E a good BBQ (or sloppy joe if you prefer)!  Here is my healthified version! ;)

INGREDIENTS:
1 lb. Lean Ground Turkey
1 C Chopped White Onion
1/2 C Grated Carrot
1/2 C Chopped Mushrooms
1 C Chopped Spinach (optional)
1/3 C Ketchup (no sugar added)
1 T Vinegar
2 T Mustard
Salt, Pepper, Chili Powder, Garlic Powder

Mmmmm....fresh veggies!


Saute onions with 2 T olive oil on Med heat until they start to look clear.  Then add in your mushrooms and carrots.  Cook for about 4-5 minutes then take veggies out of pan and set aside.  Brown ground turkey with seasoning and then add veggies back in. 


Once you have the groud turkey and veggies mixed add in the ketchup, mustard, vinegar and seasoning.  Simmer for about 10 minutes stirring often. 


Healthiest Option:
Serve in a lettuce wrap

If you are on the Tone It Up plan you can have this at lunch with bread and cheese! :)
1 Slice of Ezekiel bread toasted, top with bbq and one slice of provolone cheese.  Broil in the oven on high for 2 mintues.  ENJOY!!! :)

Kitty says "Meow"

*It's a Picnic-Kind-of-Day*

Jason asked me to bring him lunch at work today.  The weather was gorgeous so I decided to pack lunch for all of us and go to a nearby location for a picnic.  First I had to figure out what to make...a wrap and a sandwich (pretty typical for a picnic). 
My sandwich had: 1 wedge laughing cow cheese, spinach, turkey, pickles & avocado on whole wheat high fiber bread.  Jason's wrap had pepperjack cheese, bbq, leftover grilled turkey burger, spinach and pickles.

Short little walk to find a table...no one was around so we found the perfect spot across the bride.


Mmmmm!  I'm sure he is thrilled to have his picture taken with a mouth full.

I brought a red/white blanket for the table, nice touch to any picnic I think! :) 
We confined Mollie to her stroller so she wouldn't chase after the geese in the pond! ;)
It was hard to get her to look at the camera with the geese swimming behind us.


What a PERFECT day!  I was really bummed to have to take Jason back to work.  I would have loved to spend the afternoon here.  After a few photo opportunities we made our way back to the car.  We had so much fun, this will definitely be on our list to do again.  :)

*41 Minute Treadmill Workout*

This is an AWESOME way to start your day!  I like doing this one on the weekends in the morning when I have a little more time and I am not rushing to get a workout in before Mollie wakes up.  I like breaking up my workouts so I don't get bored.  This treadmill workout has a 5 minute segment in the middle where you take a break from the running intervals to do a walking incline.  Hope you like it!! :)
