Grilled Cod & Asparagus

Prep asparagus for grilling:
First rinse asparagus with cold water and then snap or cut off the ends (1 - 2 inches) which are hard and not pleasant to eat.  Next lay out a large piece of aluminum foil and spray with Pam Olive Oil Spray.  Spread the asparagus spears on the foil and spray with more Olive Oil.

Next you will want to sprinkle on your favorite seasoning.  Today I used salt-free Mrs. Dash Extra Spicy.  This was the first time I tried this flavor, I do prefer the Garlic & Herb or the Table Blend.

After seasoning the spears place another large piece of foil on top and fold up the edges to seal the foil package.

Prep the cod for grilling:

Again lay out a large piece of foil and spray with Pam Olive Oil Spray.  Place pieces of fish on foil and spray each piece with a little olive oil, this helps the seasoning stick to the fish and keeps it moist while cooking.  Sprinkle on your preference of seasoning.  Today I used Mrs. Dash Lemon Pepper blend.

Cover with another piece of large foil and seal just as you did with the asparagus.  Place on top rack of grill.  Depending on your grill and temperature, cooking times will vary.  In this case my fish was not frozen so my cooking time was only 10 minutes at about 400 degrees.  I cooked the asparagus the same amound of time and it came out perfect!  I like mine when it is still a little crisp.

Be careful of the hot steam when opening the foil packets!  :)

*10 Minute Workout*

In a hurry?  Don't think you have time to fit a workout in today?  Seriously?  Who doesn't have 10 minutes to spare to get their heart pumping and body sweating!?!?  GET MOVING, NO EXCUSES!! If you are reading this, stand up and push the chair away...let's get started!!

1 minute -  Jumping Jacks
2 minutes - Forward Lunges (add weights and do bicep curls to amp it up a little)
1 minute - Jumping Jack Squats
2 minutes - Ski Jumps (side to side)
1 minute - Jumping Jacks
2 mintues - Squats
1 minute - Plank (on hands or with elbows touching floor)

Now go get a drink of water and stay hydrated!  <3

Feels good to get moving, right!?!?  :)

*Yummy (and healthy!) Frozen Treat*


Need a cold sweet treat on a hot day without all the calories or sugar?!

I chopped/pureed strawberries til I had about 1/2 C. (you can make it as smooth or chunkie as you like). Stir in about 2 T unsweetened vanilla almond milk and 1 tsp of Stevia. Put in freezer and stir every 30 minutes until its to your desired consitency. ENJOY! :)

*Mollie Update*

Mollie is 13 months old now.  At 10 months she started taking one or two steps but each time we thought she was going to keep going she decided crawling was faster and she didn't want anything to do with walking.  Last week the switch was flipped and now she is walking EVERYWHERE!  I can't keep up with her, she zooms from room to room and is in everything.  It's great, she is changing so fast and learning new things every day.  It's amazing to watch her, she's such a blessing. 

Daycare ended on May 25th, Jason's sister is our daycare provider and she takes the Summer off to spend time with her four VERY busy kids.  On days that I have to work out of town Jason's niece will come over and watch Mollie for us.  It's so wonderful to have family around to help out!!  I love the fact that I can work from home and spend lots of time with my daughter, I am very lucky!

Mollie has been going through a rough stage with eating.  We just go with the flow!  One day she will scarf down her veggie noodles and the next day she just spits them out or throws them to the floor for the dogs to snack on.  It's a guessing game trying to figure out what she will eat!  She LOVES grapes, graham crackers and her Gerber puffs.  She still gets a few bottles everyday and one before bed.  I did switch her to the toddler formula about a month ago. 

Last week 2 top teeth came in and two more are on the way!  Luckily she takes teething pretty well for the most part.  She loves to show us a big grin and those teeth are just too cute.  Wow, she is changing so fast!!

Right now she is going to bed between 8:00 and 9:00 and wakes up between 6:00 and 7:00.  That has been pretty consistent since she was 3 months old.  Now, if Mommy could learn to go to bed when she does!  Haha, never happens. ;)

The sign language is going AWESOME!  She learned the sign for "milk" at 8 months.  Since then she has learned "eat" and "all done".  I am working on diaper change, Mama, Dada and more.  I think she is going to start picking up on them very soon.

*My homemade version: 1 C unsweetened vanilla almond milk, 1/2 C double strength coffee, 1/8 tsp vanilla extract (1 tsp if using imitation vanilla), 1/8 tsp cinnamon and 1 tsp of Stevia.  ONLY 40 calories!!! **If you want a pumpkin spice latte use pumpkin spice instead of cinnamon.  (Blend all ingredients in blender to get it frothy.) ENJOY! :)

*Protein Pancake*

*Recipe from Tone It Up*

This is absolutely the best thing ever!!

1 scoop vanilla protein powder (I use Muscle Milk Light brand)
1/4 C egg white (about 2 eggs)
1/2 mashed banana
1 tsp cinnamon
1 T ground flaxseed
After mixing the above ingredients add in 1/4 C fresh blueberries.

Cook like a pancake! Enjoy!! :)

*First Blog*

As a Mom of a 1 year old, life is a bit CrAzY!  I started vlogging on YouTube to try and capture some of the moments of my daughter's first year that seemed to be passing WAY to quickly.  Initially I was only going to post videos about everything and anything baby related but I ended up using YouTube to help me stay motivated in my weight loss journey too.  Now I want to use this blog for the same purpose and then some...I will post everything from day-to-day activities with my daughter, my fitness and diet regimen, beauty tips and anything else that comes around.  As I'm writing this I am looking at the clock which says 11:54pm...way past my bedtime.  Mollie, my daughter, is an early riser and I usually regret it when I stay up this late!  I have decided to quit procrastinating and finally get this blog started!  Yah, it's I can go to bed.  :)
