Prep asparagus for grilling:
First rinse asparagus with cold water and then snap or cut off the ends (1 - 2 inches) which are hard and not pleasant to eat. Next lay out a large piece of aluminum foil and spray with Pam Olive Oil Spray. Spread the asparagus spears on the foil and spray with more Olive Oil.
Next you will want to sprinkle on your favorite seasoning. Today I used salt-free Mrs. Dash Extra Spicy. This was the first time I tried this flavor, I do prefer the Garlic & Herb or the Table Blend.
After seasoning the spears place another large piece of foil on top and fold up the edges to seal the foil package.
Prep the cod for grilling:
Again lay out a large piece of foil and spray with Pam Olive Oil Spray. Place pieces of fish on foil and spray each piece with a little olive oil, this helps the seasoning stick to the fish and keeps it moist while cooking. Sprinkle on your preference of seasoning. Today I used Mrs. Dash Lemon Pepper blend.
Cover with another piece of large foil and seal just as you did with the asparagus. Place on top rack of grill. Depending on your grill and temperature, cooking times will vary. In this case my fish was not frozen so my cooking time was only 10 minutes at about 400 degrees. I cooked the asparagus the same amound of time and it came out perfect! I like mine when it is still a little crisp.
Be careful of the hot steam when opening the foil packets! :)
